Do you have a food you could eat every day? My friend Abby + I discuss on the regular how meatballs are life and we could eat them every.single.day. I love them plain, with red sauce, or swimming in the delicious sweetness of bbq + grape jelly (sounds weird, tastes amazing).

Speaking of meatballs, I decided this week was the perfect time to make a big ol’ batch. Of course, I doubled…because you know that’s what I do—if you’re making the mess, make it worth it! Truth be told, next time I’m going to quadruple the batch; they’re so simple to make, I’m totally going to make bunches, eat them all the days, and MAYBE have a few left over to freeze, maybe. HA!

I made a few changes from the original recipe: swapped turkey for the ground beef (being a little healthy and all) and added a bit more onion + parsley because they’re delicious.

What you’ll need:

1 lb. ground turkey

½ cup onion, finely chopped

¼ cup bread crumbs (I used Italian seasoned)

2 garlic cloves, minced

1 egg, whisked

¼ cup grated parmesan

3 Tbsp. ketchup

1 tsp. salt

1/2 tsp. pepper

½ Tbsp. dried parsley

Directions:

  1. Preheat oven to 400 degrees F. Line baking sheet with foil and spray with cooking spray.

  2. Mix onion, bread crumbs, garlic, egg, cheese, ketchup, salt, pepper, and parsley in a large mixing bowl.

  3. Add ground turkey and mix until combined. Don’t overmix.

  4. Form into 1-inch balls, placing on baking sheet.

  5. Bake for 15-20 minutes until browned and fully-cooked.
